Pumpkin and Chickpea Curry 1lb pumpkin Cup chopped bell peppers 1 tsp coriander powder 1/2 tsp cumin powder 1/4 tsp cinammon some chilli 1/2pint stock 1 can chopped tomatoes onion garlic ginger lemon juice.
Dry fry spices. Soften onions then add garlic and ginger Add pumpkin and stir till coated add stock and tomatoes and simmer until thickened and pumpkins are soft. Adjust sweetness with lemon juice if necessary
